Is that a banana, or are you just happy to see me?

I’ll be honest I’ve never been a massive fan of the banana. The texture gets me, and as far as fruit goes there has always been better options. But a girl who cuts sugar, gluten and processed foods soon learns to reacquaint herself with forgotten friends!

In an ultimate example of the lazygirl way, here is my recipe for sugar free, flour free, fuss free pancakes.

  • 1 banana
  • 2 eggs

TADAH!

  1. Take your ingredients and mix in a blender or food processor to make into a liquid.
  2. Heat your pan and use an oil – I recommend coconut oil for this one as it compliments the banana flavor. Ghee also works just fine, and the buttery flavor is good if you are craving a more ‘traditional’ pancake.
  3. Cook the way you would a normal pancake, waiting for air bubbles to form on the top, and flip!

I love these served warm, simply with some fresh blueberries.

They are also lovely with natural yoghurt and / or a little honey if you need something sweeter.

To really go crazy, add some fresh fruit during the cooking process. I find this works best to add fruit once you have poured your shape into a pan – this way you get a more even distribution and the fruit is encased inside. Fresh blueberries, strawberry pieces and raspberries all work particularly well.

These will refrigerate relatively well for a snack, but they are honestly more enjoyable warm.
