So, in true lazy girl fashion I’ve been MIA for a month or so. I’d like to sit here and say I had some sort of justifiable reasoning – but I don’t!

And so I am back, with a little sweet treat for Sunday. This is a cherry ripe frozen yoghurt, but pretty much any frozen fruit will work.

What you need:

  • 1 cup frozen cherries
  • 1 cup of natural Greek yoghurt
  • 1 cup of coconut (either finely desiccated or shredded pending your preference)
  • 1 teaspoon of vanilla essence

Get it done:

  1. Put all ingredients in the blender or food processor.
  2. Blend.
  3. Pour mixture into containers of preference.
  4. Freeze.

And once again that’s it. A sweet treat to keep in your freezer when you need a little something to get you through!
