From a convenient pre-made option, to one you can do at home yourself. With little to no fuss, and little ingredients as well!
Credit where credit is due – this recipe comes from the July issue of Woolworths Fresh magazine. This month has some great recipes so I highly recommend picking one up while you still can. And they’re free!
What you need:
- 2 cups of raw cashews
- 10 fresh dates, pitted
- 250g punnet of strawberries, hulled
- 1 tbs coconut oil
- 2 tbs chia seeds
- 1/2 cup desiccated coconut
Make it happen:
- Process cashews in food processor until finely chopped and transfer to bowl.
- Add dates to processor until finely chopped.
- Add strawberries to processor until chopped.
- Return cashews to processor with coconut oil and chis seeds.
- Process all ingredients in processor until combined.
- Line a tray with baking paper.
- Place coconut in separate bowl.
- With damp hands, roll cashew mixture into small ball, and roll in coconut to coat.
- Once finished, place tray in fridge for a couple of hours before serving.

This recipe made about 30 balls to I have frozen most of them. This isn’t an overly sweet recipe, so if you need something more you might want to play with a good vanilla, or increase your date ratio. Also keep in mind as a softer mixture – they will hold shape, but not rolling around in a zip lock bag in your handbag (lessons learned the hard way). Still tasty though!
