What a fruit cake.

I know I harp on about it, but if you’re in the process of changing your habits and diet – organisation is key! You’re less likely to break and do something you’ll regret if you always have the good stuff on hand.

With that in mind, here is Rojo’s organic fruit cake. You’ll notice this has a lot more ingredients than most of my lazy-go-to recipes, however a lot can be dependent on what you actually have in the cupboard, and this will make a decent amount that freezes well.

I know I’ve warned you before of the challenges that come with mum’s ‘I go with the feel’ recipes, but let’s do our best! As a result the format below is a little different to what I would normally give you. I’ve also included some extra commentary below – it’s the director’s cut!

What you’ll need part one:

  • 6 over-ripe bananas
  • 8 chopped figs (or dates but dried figs are definitely my preference)
  • Rind from one orange
  • ½ cup of shredded coconut
  • Any nuts / goji berries or dried cranberries (all optional and pending your preference, I prefer dried cranberries, no nuts)
  • Dessert spoon of honey
  • Teaspoon of cinnamon
  • Teaspoon of ginger
  • Teaspoon of vanilla
  • 3 tablespoons of coconut oil
  • 2 beaten eggs

Get it done part one:

  1. Combine all of the ingredients above in a big mixing bowl.

This is where it gets dicey…now that you have all your ‘wet stuff’ together:

What you’ll need / get it done part two:

  • Coconut flour – this is most of your flour base, start off with about ¾ cup and build
  • Brown rice flour – add in a lesser proportion to the coconut flour, but add enough of both slowly so you start getting a normal ‘dense-ish-cake-batter texture’
  • ½ teaspoon of baking powder
  • ½ cup of cacao (also optional, but it’s lovely with the flavor from the orange rind like jaffa)

Once all combined, put in your cake tray (greased and lined) and cook on 180 degrees for about 30-45 minutes – until firm. I recommend a square 20 inch cake tin as the recipe makes more of a dense slice mixture.

Perfect for morning tea, or personally I love it as a little dessert with a cup of tea.
