Meatballs people. This is a simple one and a time saver down the line. Literally just two kilos of meat! Because if you’re going to take the time, you might has well make two kilos worth and freeze the rest for later!
Now lets spend some time stating the obvious. You can split your meat up and do different flavors, you can use different sort of mince to keep it interesting. I tend to keep mine beef, for my red meat fix and pretty basic so I have a good meal base. Just add some dry stock to taste, herbs, salt and pepper – and I throw an onion in mine or whatever fresh herbs I happen to have in the fridge.
I recommend freezing them raw in meal portions / zip lock sandwich bags. Three is enough for me, but appreciate this won’t be the case for everyone.
Some ideas for your balls:
- Cook in a pasata base with zuccinni spirals or rice pasta.
- Pan fry and serve with steamed potato / vegetables.
- Pan fry and serve with potato/sweet potato mash.
- Stew in a sauce and serve with rice.
- Enjoy with a little hummus or tzatziki.
- Make it a fiesta with some mexican salsa.
- I mean – it’s just meat – do what you want.

One piece of advice if you are cooking as part of meal prep – be sure to under-cook them considering they are going to be cooked again / reheated.
